Pauline’s Coconut Cake
6oz castor sugar
7oz self raising flour
3oz sweetened desiccated coconut
Splash of milk (if necessary)
Preheat oven to 190C/ 375F/Gas Mark 5
(if using a fan assisted oven you may wish to lower the heat)
If using a food mixer, put all ingredients into the bowl and mix until well blended.
If making by hand you may wish to beat sugar and stork together, mix the flour in and then add the eggs one at a time, beating between each egg.
If you feel the mixture is slightly thick then add a splash of milk.
Put the mixture in a 2lb tin
